- 1 cup unsweetened almond milk (or milk of your choice)
- 2 tablespoons pure maple syrup
- 1/2 teaspoon vanilla extract
- 1/2 cup fresh or frozen raspberries (plus more for garnish)

Instructions
- Start by preparing your ingredients: measure 1/4 cup chia seeds and 1 cup almond milk. Make sure the almond milk is unsweetened.
- Add the chia seeds and almond milk to a medium-sized bowl or a mason jar. Stir the mixture thoroughly to ensure the chia seeds are evenly distributed in the liquid.
- Add 2 tablespoons of maple syrup and 1/2 teaspoon of vanilla extract. Stir again until everything is well combined. You should have a uniform mixture.
- Cover the bowl or jar with plastic wrap or a lid and let the mixture rest in the refrigerator for at least 2 hours, ideally overnight, so the chia seeds can swell properly.
- After the resting time, the pudding should have a thick, gel-like consistency. Stir the pudding well before serving to loosen the texture.
- Serve the pudding in bowls and garnish as desired with fresh raspberries, sliced almonds, or shredded coconut. An extra drizzle of maple syrup makes it even sweeter!
